Sara’s Butternut Squash Risotto

“Grandpa & Me: Raking Leaves” by Norman Rockwell

In ‘Raking Leaves,’ Norman Rockwell portrays a grandfather raking leaves with his grandson on an Autumn day. There is something magical about those crisp, sunny days spent raking and bagging leaves. The orange hues remind me so much of this recipe for Butternut Squash Risotto. Enjoy this savory dish after spending the day outside with your loved ones!

2 Tbsp olive oil
1/2 cup shallots 2 cloves garlic, minced
1 Tbsp chopped sage
1 cup Arborio rice
1/2 cup dry white wine
3 cups vegetable broth
2 cups Butternut Squash, diced (frozen is so easy!)
1/2 tsp salt
1/4 tsp pepper
1/3 cup Parmesan cheese, grated (I use Follow Your Heart alternative)


Using saute mode on an Instant Pot, heat oil. Add shallot and cook for about 2 minutes, stirring often. Add garlic and sage and cook until fragrant, 1 minute. Add rice and stir to coat. Add wine and cook, stirring until mostly absorbed, 2 minutes. Pour in broth and then add the butternut squash, sal and pepper. Turn off saute mode. Close and lock the lid and put on high pressure for 6 minutes. Release pressure and remove the lid. Stir in parmesan and let sit until thickened, about 10 minutes.
