The Castle Cake was my daughter’s wedding cake – She wanted a princess cake. I make flowers with either fondant or gum paste – those were all handmade. The cake was an anniversary cake for a friend’s parents. The buche d’ noel is a cake that I make every year for Christmas. I usually make several of them. The mushrooms are meringue. The cocoa paintings were done with only cocoa powder and cocoa butter. They are painted on mint sugar plates that made – everything is edible. Back in the day when I did competitions that was a requirement. The beet roses were hand carved with the paring knife – I like to do those as a garnish for cold platters. Sometimes I’ll even cook them and serve as a vegetable on a hot plate. The Abe Lincoln is sculpted from frosting, I did a George Washington too, but couldn’t find a photo.
